Rice with Chile Peppers and Cheese

Ingredients for a round casserole dish (double the recipe if you want a large casserole)

  • 1 C. Rice
  • 2 C. sour cream
  • 1/2 lb. grated Cheddar and Monterey Jack cheese combination
  • 4 oz. can of green chiles chopped
  • 1/2 cup grated Parmesan cheese
  1. Cook rice until tender.
  2. Combine rice, sour cream, Cheddar and Monterey Jack, and green chiles.
  3. Pour into buttered casserole dish.
  4. Dot with butter and sprinkle with Parmesan.

BAKE UNCOVERED AT 350 for 30 minutes
