Ingredients for a round casserole dish (double the recipe if you want a large casserole)
- 1 C. Rice
- 2 C. sour cream
- 1/2 lb. grated Cheddar and Monterey Jack cheese combination
- 4 oz. can of green chiles chopped
- 1/2 cup grated Parmesan cheese
- Cook rice until tender.
- Combine rice, sour cream, Cheddar and Monterey Jack, and green chiles.
- Pour into buttered casserole dish.
- Dot with butter and sprinkle with Parmesan.
BAKE UNCOVERED AT 350 for 30 minutes
