For the Condiments Prepare: _ cup cucumber, halved lengthwise, seeded, thinly sliced _ cup celery, thinkly sliced _ cup carrot, julienned 8 Boston or Bibb lettuce leaves, washed and dried or you can use tortilla wraps For the Chicken Combine the following to make the hot sauce. 1/4 cup hot sauce 1/4 cup of honey 1/4 cup of lime juice (I used the bottle stuff and used a little less) Toss together 1 lb boneless chicken breast or thighs, cubed 1 t. kosher salt ( I did not use salt) 1 t. Cajun seasoning blend and then ; sauté in 1 T. vegetable oil Add the hot sauce-honey mix; simmer until sauce reduces and thickens, about 5 minutes. To assemble wraps, place about _ cup chicken and a little sauce in each lettuce leaf. Add condiments and then drizzle with blue cheese sauce before serving. To make your own Blue Cheese or just use bottle stuff (much easier) Stir together, _ cup mayonnaise 2 T. milk 1 t. Worcestershire sauce juice of _ a lemon salt and cayenne to taste 1/3 cup blue cheese, crumbled 1 T. chopped fresh parsley Chill until ready to serve.
