1/4 cup pineapple juice 2 TBLS of lemon juice 4 (6oz.) salmon fillets 2T of brown sugar 4 teaspoons chili powder 2 teaspoons grated lemon rind 3/4 teaspoons ground cumin 1/2 teaspoon salt 1/4 teaspoon ground cinnamon Cooking spray Garnish with lemon slices if you wish 1. Combine first 3 ingredients in a zip-top plastic bag; seal and marinate in refrigerator 1 hour, turning occasionally. 2. Preheat oven to 400 3. Remove fish from bag; discard marinade Combine sugar and next 5 ingredients (sugar throughout cinnamon) in a bowl. Rub over fish; place in an 11x7-inch baking dish coated with cooking spray. Bake at 400 for 12 mins or until fish flakes easily when tested with a fork. Serve with lemon slices , if desired . Preheat your grill for about 5-10mins then put a sheet of aluminum foil over the grill and place the salmon on top for about 7-9mins (don't flip it) or until it flakes. The skin or scales of the fish will stick to the aluminum foil but you don't need those anyway. IT'S Delicious!!!!
