Barbecue Roasted Salmon

Ingredients

Marinade 

  • 1/4 cup pineapple juice
  • 2 tbl. fresh lemon juice
  • 4 (6 oz) salmon fillets

Topping

  • 2 tbl. brown sugar
  • 4 tsp. chili powder
  • 2 tsp. grated lemon rind
  • 3/4 tsp. ground cumin
  • 1/2 tsp. salt
  • 1/4 tsp. ground cinnamon
  • Cooking spray
  1. Combine marinade ingredients into a ziploc bag with the salmon fillets and marinate in the fridge for 1 hour. (turning occasionally)
  2. Preheat oven to 400 degrees
  3. Remove fish from Ziploc and discard marinade
  4. Combine sugar and next 5 ingredients (sugar through cinnamon) in a bowl.
  5. Rub over fish and place in a 11 x 7 inch baking dish coated with cooking spray.

BAKE AT 400 FOR 12 MINUTES or until fish flakes
